Its flavors are unique, its products and culinary techniques remain in force in recipes transmitted from generation to generation.

Jujeños are ufanned by saying that there are no preservatives or canned products in the province. They have a wonderful  phrase “food goes from earth to plate.”  And nothing closer to reality. Gastronomic sightseeing in Jujuy is to delight in dishes with unique flavors and all crossed by the same factor: the roots of ancient cultures. In addition, the gastronomic establishments that make gourmet cuisine enrich their menu with the incorporation of ingredients originating in this province of Northern Argentina.

In Jujuy the tourist will delight not only with food but also with its elaboration process and how they get to the table. It is not only a gastronomic product, but it symbolizes a whole story. Climate is a determining factor in Jujujuña agriculture as well as the different heights above sea level in the province, which promotes diversity in the development of food.

In the  Puna  it is necessary to try calapurca, a stew with burning stones, a mash soup, tistincha or tijtincha, a lamb or llama casserole, the locro huascha, sausages and different spicy, chicken, tongue, from mondongo. As well as experiencing the different forms and flavors of potatoes grown with ancient methods without pesticides or chemicals

Surprise the abundance of tropical fruits in   Yunga  Jujeña  where we find passion fruit, papaya, avocado, banana, acerola, pitaya, pineapple. Elements that allow to generate unforgettable dishes such as humitas and tamales, cakes, yagua, variety of salads made with fruits and vegetables. And chicken chicharrón and chancho, api, anchi, rice con leche, or mazamorra, share a great palette of flavors.

On the other hand, in the  Valleys , next to the dikes, the specialty is pejerrey souffle, trout and fried cane honey in the area. Inadmissible to miss the quesillos con cayote, pickles, roasts, wetted head, milanese of quesillo, buns or tortillas, ice creams with native products merge the usual with gourmet cuisine.

The  vineyards  have a particular feature to be among the  highest in the world , dedicated to varieties of grapes of high quality oenological such as Malbec, Cabernet Sauvignon, Syrah, Sauvignon Blanc and Pinot Noir. The thermal amplitude, complemented by the high heliophany results in wines with unique identity, complex and great colour. The National Institute of Viticulture (INV) recognized the Geographical Indication (GI) “Quebrada de Humahuaca”. Some of its wines have been distinguished by their high quality, by renowned international critics.
