Quinoa soup

A rich and nutritious soup that you can prepare in a few minutes.

  • 1 grated carrot
  • 1 diced tomato
  • Half a tray of vegetable cut for soup (supermarket)
  • 1 sprig of celery
  • 1 cup quinoa
  • Ground pepper half a teaspoon
  • Spicy paprika or merken pinch
  • Salt to taste
  • 1 liter and a half vegetable broth
  • Grated cheese to taste
  • 2 tablespoons olive oil


Boil quinoa with salt before rinse for five minutes. Chop or grate the vegetable and make a sofrito with the carrot and tomato (in olive oil). Heat the broth, put the vegetables and simmer 25-30 minutes. Raise the heat and in the first boil pour the quinoa, leave for two minutes and turn off. Serve with grated cheese.
