The roast has no logic

In Argentina, any day is good to make a roast.

My cousin is Spanish. A few years ago, on a hot December, I was visiting Buenos Aires. All of us, we were thinking about the menu for dinner that night. She, delusia, proposed pasta. Scandalized, the Argentine cousins told him how did he think of eating such a heavy dish with the heat it was. Our counterproposal, of course, was  roasted . It seemed the most natural thing to us. The best plan.

That's when my cousin used logic where, for us, passion rules: “Is it hot to eat pasta, but not to set fire and stand next to the embers?”. Right, cousin. Because, in Argentina, any day is good to make a roast.

With hot, cold, even rain. Day or night. To many or a few. Programmed or improvised. Variadito or simple. The important thing is the ritual, what happens around, the magic of roast. Despite the heat of the embers, the smell of smoke, it sometimes takes longer than expected. Whoever comes from outside may find it strange at first, but it takes only a moment to understand. If not, ask my cousin.
