The Argentine team of ice cream masters became champion of the fourth edition of the Latin American Cup of Artisan Ice Cream. He achieved the qualification for the world championship of the specialty, which will take place from 18 to 21 January in Rimini, Italy.
The competition also participated teams from Colombia, Uruguay, Brazil, Peru and Ecuador. They had to pass five tests and made two artistic pieces: a crunchy sculpture and another on ice.
The Argentine team was led by master ice cream maker Maximiliano Maccarrone. He was accompanied by Pablo Renes, Matías Dragun and Rubén Darré. While the jury was composed of Italian Sergio Dondoli, representative and organizer of the Coppa del Mondo della Gelateria, and the captains of the participating teams.
The theme chosen by Argentina was “Twenty thousand leagues of underwater travel”, inspired by Jules Verne's classic. Each of the preparations were exhibited alongside two sculptures - one made in ice and the other in candy - representing the battle between the giant squid and the submarine, one of the most prominent passages of the French writer's novel.
In the other tests, the national team presented a salted ice cream based on cheese and ciboulette on another preparation frost of pine mushrooms in Breton cheese bed, compote of onions and beet cream.
In the iced glass category, they prepared a mixture of Turkish figs, sambayon, white coffee semifreddo, coffee and slime meringue and coffee syrup.
Meanwhile, in the competition called “Mistery Box” the Argentines had to work with dulce de leche. They made an ice cream based on that flavor, pink pepper and tangerine.
Finally, in the crunchy ice cream stage three variants based on chocolate were presented.
“We have been working for over a year on this project. We prepare well in advance. Not only the four of us, but all the alternates, advisors, collaborators and institutions that accompanied us along the way,” said Maccarrone.
For his part, the master ice cream maker Dondoli highlighted the elaboration of ice cream in the country and congratulated the champions.
“Argentina is the birthplace of artisanal ice cream, then Italy. I am surprised by the level and quality of ice cream in this great country. It is proud to be a part of this championship,” he said.
The competition was organized by the Association of Artisanal Manufacturers of Ice Cream and Allied and the Argentine Federation of Pastry Workers, Confectioners, Ice Cream, Pizzeros and Alfajoreros.
Second place in the Latin American tournament went to Colombia, while Uruguay completed the podium.
