Tomaticán: the flagship dish of San Juan

Ingredients

  • 1 onion
  • 4 eggs
  • 5 tomatoes, about a kilo (they need to be peeled)
  • sugar
  • Salt and seasonings to taste

Preparation

  1. Place a little oil in a frying pan and fry the onion.
  2. Then chop the tomatoes into squares and add them. To all add salt and seasonings to taste.
  3. Once the tomatoes are cooked, add the eggs and mix everything to make it homogeneous.
  4. After this, and to remove the acid, add a little sugar (no more than a tablespoon). Wait for it to be ready and eat! You can accompany it with bread and olive oil.
