The real eggplant to parmesan

It is a nutritious, delicious, antioxidant and low-calorie dish. Few ingredients and a surprising result.

Known in Italy as Parmigiana di Malanzale , Parmesan eggplants are a charm of that beautiful cuisine. Today we propose you to take a small trip to southern Italy and experiment with a very simple but incredibly rich recipe as few. The real recipe is very simple, we do not need many ingredients or go crazy to achieve a parmesan eggplant that you would find in a restaurant in Naples.

How to cook eggplant to parmesan

  • 2 eggplants
  • 400 gr Mozzarella
  • Grated cheese to taste
  • A cup of tomato sauce
  • Olive oil to taste
  • Salt and freshly ground pepper, to taste
  • Fresh basil to decorate (Optional)
  1. We start by preheating the oven to 200° C. Meanwhile, wash the  eggplants  and cut them half-cm slices
  2. . We put salt and pepper to taste with a drizzle of oil (if it is olive much better). Try to put your favorite method in the tray to prevent them from sticking. Baked for 20 minutes.
  3. Once the eggplants are cooked, remove them from the oven (Do not turn it off!) and on a baking sheet we will interspersing layers of tomato sauce, eggplants and mozzarella. We will follow these steps until the mozzarella and eggplants are finished, trying to start with tomato sauce and finish with it so that it is above everything. This is the time to sprinkle over the preparation grated cheese that we have mentioned in the list of ingredients.
  4. We leave our eggplants to the parmesan in the oven until the cheese is gratin.


Please always try to wash your fruit or vegetables carefully. It is our recommendation for healthy and fresh cuisine.

Like many other vegetables, they quickly oxidize. This is why we always recommend that they be cut at the moment and not to leave them hours before (and worse days!), to keep them from getting ugly.

At what times can you eat this dish?

Amazing for a winter night. Despite giving us warm (and not to speak accompanied by a good  wine ), it is very healthy and light. The large amount of potassium that eggplants have gives them the quality of being antioxidants. To benefit from all its nutrients, the ideal is to cook them in the oven or on the grill. They also have very few calories, which makes them ideal for a diet.
