The mote, the most typical dish of Catamarca

The mote is a popular catamarqueño dish, of Belicho origin, with a preparation that requires patience and a great cultural and community value.

The mote is a very popular dish in  Catamarca . It is an appetizer based on corn, meat and other ingredients. It is a belicha  meal  and has a cultural connection with collective life and community work.

 Ingredients of mote 

  • Ground Corn
  • Meat Bean
  • Onion
  • Ground Peppers
  • Tomato
  • Broth


  1. Water should be boiled while inside the corn and beans are soaked. One that boils, seasonings add to preparation. The amount is defined by the taste and preference of each cook. The ways of preparation change according to the cook, but many understand that this preparation requires his time. That is why they start this process a day earlier, leaving everything ready for the final moment of preparation.
  2.  Separately meat is prepared.  The meat is added and, once it is well cooked, the onion and tomato are thrown into the preparation. At this point, the ground chili pepper is added to season. With all the ingredients together in one saucepan, it should be cooked until the water boils again.
  3.  The union.  Now yes, with cooked tender corn, on the one hand, and cooked meat, on the other, the two preparations are combined in one broth. This will shrink as you cook and a juicy preparation will remain.

In  Catamarca , the mote was sometimes served as breakfast. For a more native experience, it can be accompanied with Creole bread.

 The culture 

Young belichos have become accustomed to buying hot mote dishes every time they return from a party or event every weekend. This dish has its strong moment at the time of wheat harvest.
