The famous pickle

The famous pickle is born as a preparation to preserve food, but is so rich that it is used as a sauce to accompany meals.

El famoso escabeche

Pickled is easy to prepare and delicious. Here is the traditional  recipe  .


  • Oil
  • Onion
  • Carrot
  • Water
  • White wine vinegar


  1. Sauté in the oil the onion, between 4 to 6 minutes. It must be white, not golden.
  2. Add a cup of water. Then the carrot. Let it cook until soft.
  3. Add a cup of vinegar.
  4. Boil everything for 10 minutes.

 Pickled  is a preparation that is used to preserve all kinds of food and be able to pack them. It is an exquisite entry to start tasting Patagonian dishes, based on vizcachas, partridges or hares. But it goes very well with other meats, fish,  eggplants , zapallitos, cauliflower, etc.
