Quinoa Soup

A rich and nutritious soup that you can prepare in a few minutes.

Sopa de quinoa


  • 1 Grated carrot
  • 1 Diced tomato Half a tray of vegetable cut
  • for  soup  (supermarket)
  • 1 sprig celery
  • 1 cup quinoa
  • ground chili pepper half a teaspoon
  • Spicy paprika or merken pinch
  • Salt to taste
  • 1 and a half liters of vegetable broth
  • Grated cheese to taste
  • 2 tablespoons olive oil


Boil quinoa with salt before rinsing five minutes. Chop or grate the vegetable and make a sofrito with the carrot and  tomato  (in olive oil). Heat the broth, put the vegetables and simmer 25 to 30 minutes. Raise the fire and in the first boil  to throw quinoa , leave two minutes and turn off. Serve with grated cheese.
