The famous Potato Cake

An argentinian classic! Potato cake is one of the most yielding and hearty dishes. Ideal for large families like ours.

We present a well Creole dish by adoption: Potato Cake.

 Ingredients 

  •  Aromatic garnish  (I leave you an example):
    • 2 Large onions
    • 1 Green Morrón
    • 1 Red Morrón
    • 3 Garlic
  • 750 gr  minced meat 
  • 250 gr bacon (optional)
  • Spices to taste
  • 1 cup red or white wine
  • 1 kg potato
  • 200 gr butter
  • 150 ml whole milk
  • Cheese to taste
  • Green olives (in pieces)
  • chopped hard boiled egg (optional)

 Preparation: 

Brown in a little oil the chosen aromatic garnish. Cook this well before adding salt and freshly after incoporrar the minced meat. Always let it be cooked on high heat.

Add a mixture of spices,  to taste . In my case I opted for salt, pepper, ground chili pepper, sweet and smoked paprika and cayenne pepper.

Add red (Marsala or Porto) or white  wine  and cook over heat crown 20 minutes or until reduced. Once finished you can add green olives and hard boiled egg into pieces.

 For puree:  I boiled 1 kilo of whole potatoes with salt, step on the potato on its own until it has no lumps. Add lard, warm milk, cheese (muzarella, Sardinian, Parmesan, or whatever you have on hand), salt, pepper and raalla nutmeg.

Dump over a baking dish and cover it with mashed potatoes on top. With a fork make the design you want, bring to the oven until it gratin and you're done!
