Humita is a traditional dish from northern Argentina , is made from grated corn and can be sweet or salty. This delicious dish can be made in two versions: sweet or salty. They are very filling and with exceptional taste. It is a food made with corn and covered with its leaves. It has few vegetables and the typical is to put goat cheese, although this option is optional and depends on the taste of each diner. Another advantage is that it is an economical dish and its elaboration is simple.
Salt and Pepper
The first step is to reserve the skin of the corn, also known as chala. It should be removed carefully trying not to break or fractionate, which is very important since the presentation and final assembly of the dish depend entirely on this. They should be bleached in boiling and salted water, and then removed and drained.
On the other hand, the corn is grated and left in a bowl. Onions, green onions and peppers should also be chopped, preferably red. In a pre-butted frying pan place the chopped vegetables and browned and then add the corn and tomatoes cut into small cubes.
While our ingredients are cooked over moderate heat, milk is added and seasoned to taste. Those who wish to make sweet humites, it is here that they can place sugar. Once the preparation acquired a creamy consistency, it should be removed from heat and allowed to cool.
For the assembly of our dish, we need the leaves of the corn that we had bleached before. For each humite we need two leaves that need to be placed in the form of a cross.Once this step is done, the filling is placed in the center and above a few cubes of fresh cheese, preferably goat.
It closes the package using the same sheets as threads and secures well. Perform the same procedure with each of the humites. In a boiling saucepan and salt it is cooked for 20 to 25 minutes and ready. Enjoy an exquisite northern dish!
