Sensitivity to gluten

Gluten sensitivity is a condition of many people, but it is not always celiac. Here is the difference of this intolerance.

Gluten is a mixture of glutenin and gliadin, two proteins responsible for “elasticating” the masses. It is present in a large number of  cereals . And it produces digestive intolerance. But gluten sensitivity is not always  celiac .

 In people sensitive to gluten not  coeliac disease  , symptomatology always occurs. And in addition, it starts quite quickly once the food is consumed.

An intolerance

In this case, it is only an intolerance so a certain amount of  gluten is tolerated. Each person has a different tolerance, which can vary over time. But it is difficult to find cases where no gluten can be eaten. And this is the main difference with celiac disease.

Symptoms are pain and bloating, flatulence, diarrhea, constipation, nausea, vomiting, burning, tiredness, malaise. There may be cases of dehydration or deficit of some nutrients.
