Fried rosquitas for a cordovan matteada

We Cordobans love to kill. With tortillas, creolitos, snack or rosquitas. We have available this recipe that is to suck your fingers!

Roasted omelet or fried cake. Baked rosquitas or fried rosquitas,  that's the point . We enable this recipe bomb of fried rosquitas to accompany any snack. They're like some kind of donut, but  pretty little houses .  A classic  that is sold in the corners of each Cordovan neighborhood and that can not miss if you want to make your mateada  a special moment .


  • 330 g flour
  • 50 g egg (1 egg)
  • 120 g sugar
  • 55 g orange juice
  • 80 g olive oil Zest of
  • 1 lemon
  • 10 g yeast Half a liter of
  • oil, for frying Sugar,
  • cinnamon or cocoa for sifting

 Pasito to pasito 

 Step 1 

Beat the egg with sugar (until foamy) in a bowl. Add the orange juguito and lemon zest. We sift apart the flour together with the yeast. Let's gather the egg and flour  little by little  while we beat the dough. Add the oil and continue kneading until  everything is well integrated.  Until the dough is well removed from the bowl.

 Step 2 

We make portions of 30 g and we will nail his finger, to make the hole. We put to heat the oil to fry them (preferably in sunflower oil, but it can also be in fat).

We prepare a plate or a fountain with absorbent paper, and we will place the rosquitas there as we take them out. Before they cool down, we pass them through sugar and cinnamon, or the ingredient you've chosen! If you are very sweet tooth, you can add dulce de leche to them.  They are also rich  without any extra ingredients. So see what your preference is. Fried rosquitas  are just like a bomb  .

 Step 3
