Fried cupcakes and their mendocine variant

Cupcakes are an Argentine classic. In Mendoza, they are cooked with some differences. This is the mendocine variant that makes your mouth water.

Cupcakes are a national delight. The crunch of his frying in our mouth has no comparison. However, like every country meal, the different regions of our vast country give it a touch of distinction. The mendocine variant has some features such as, for example, that they are only filled with quince candy. But, on the other hand, the final decoration is also particular.

Ingredients

  • 150 g of wheat flour
  • 20 ml of neutral oil
  • Water, quantity required
  • A pinch of salt
  • A pinch of sugar
  • 50 g of quince sweet
  • 1 liter of oil for frying or fat

Preparation

In a bowl, add sifted flour, pinch of salt and sugar. In the middle add the oil and mix. Add water gradually until a smooth and homogeneous mass is obtained. Knead for 10 minutes. When the dough is ready, let stand for 20 minutes.Roll out the dough to a thickness of 2 mm and, with the help of a round cutter, make circles . In a circle arrange two slices of quince sweet.On the edge of the other circle add with your finger yolk a little water. Join the two circles and, with a fork, seal the edges. Fry the cupcakes at medium temperature until golden brown, about 4 minutes.Remove from the oil, pass through absorbent paper and enjoy .

Once fried can be passed through syrup and sprinkled with icing sugar. But the mendocine variant and popular brand that the decor should be made with colored dragee. The traditional is to fill with quince sweet, but also the sweet of alcayota and the sweet of milk are delicious.
