Winter came, time of year to cook something good “pulenta”. So we leave you this recipe. Full panties, happy hearts.

I thought I'd call it locro express, locro fácil or locro mexican (because I put red porotos), but finally decided to baptize it   free locro   . Not for free less rich. I was not going to keep the desire because basically I had some ingredients from the traditional locro and some similar (or should I say muletos?). As I said, I wasn't going to be wanting because this is not the time for dislikes. So, following the guidelines of my lentil stew, this plate came out.

ingredients

1 large onion
2 sausages
1 grill sausage
100 grams of bacon
100 grams of roasted meat
100 grams of pork tenderloin
2 cups white corn
1 can of red beans
400 grams of squash
1 liter of broth
Salt, cumin, ground chili pepper and paprika to taste.
Olive oil 20 ml.

Get to work

Make a sofrito over low heat with the onions and add the meats and seasonings to form a kind of stew. At the same time boil the squash in the broth and pour the corn (I had previously cooked) to make it creamy, and the beans. When the squash begins to disintegrate add the sofrito and cook another hour over low heat.
  Tip Tip   - Corn is left to soak one night and then boiled in water and salt and you can always have freezing to add to soups and stews in winter.
