Creole mondongo stew

An Argentine classic.

  Ingredients 
  • Olive oil Onion
  • 2
  • Red Morrón 1
  • Smoked bacon 250 grs
  • Chorizo colorado ½
  • Carrot 1 Leek 2 sticks
  • Garlic 5 cloves
  • Mondongo 1
  • Vegetable broth c/n
  • Bean 1 cup
  • Crushed tomato 500 cc
  • Salt
  • Pepper
  • Paprika
  • Cumin
 Procedure:  For the mondongo stew, chop the onion and bell, cut the carrot into slices, bacon into canes and the red chorizo into slices. Saute these vegetables in pot with olive and add the bacon and the red chorizo. Add the chopped leek and garlic. Mix and stir for several minutes. Add the mondongo desgraasado and in canes (previously boiled in broth for 2 hours) plus the beans previously hidtated for 12 hours. Finish with the crushed tomato and add broth if necessary until cubir. Season and cook for 45 minutes. Source: Argentinian Chefs
