Harvesting under the moon

The philosophies of life, since time immemorial, have been modifying the products we consume. Wines are not exempt from this rule and so currently the modes of cultivation, harvest and production are changing. In a slow but sure trend, humanity takes into account the consumption of products of organic and biodynamic origin. In vitiviniculture, we understand by these concepts wines made with a total absence of pesticides and artificial fertilizers, manual harvests without damaging the plant, and all in perfect harmony with the universe that surrounds it. In Fiambalá, Province of Catamarca, one of the most desert places on the planet, within the Las Retamas estate, organic and biodynamic wines began to be produced and its highest vineyards are at 1790 meters above sea level. Bodega Cabernet de Los Andes has different lines. Plenilunio is the wine that is harvested with a full moon and the best known of the winery. They gather the grapes among wines, empanadas and live music. The next day, the women are in charge of stepping on the grapes. When uncorking a specimen of its 2011 Malbec, clear aromas of violets, ashes and a strong presence of wood can be perceived due to its contact with the oak. Once in glass you can appreciate purple shades with strong inks and resinous legs. To drink it is to notice a marked presence of tannins and astringency. It is fleshy and has a balanced acidity. It has a long finish and marks its presence. It is a wine with its own rhythm. Time stops and it must be sipped. It justifies the price-quality ratio and shows why we look back at the careful and personalised production of the food we consume.
