A good hake loin can be a delicious dish — and ofcourse very light — and even if it's perfect and feels good when we're on a scrambled stomach, it's also a great dish to be satisfied and enjoy a good fish recipe.
In a low saucepan, we simmer a half-cm sliced potato, an onion cut into quarters, and a sliced carrot. To taste it, we add a bunch of fresh parsley, a bay leaf and black pepper. We put everything in the saucepan, add water and bring to a boil. The liquid should be the one necessary to cover the ingredients and a little more. You have to be aware in case it evaporates to add what you need. This pre-cooking will last approximately 15 minutes, until the potato and carrot are tender.
Incorporating the fish:
When the garnish takes about 15 minutes cooking, put the fish loins for four or five minutes until its color begins to change from pink to white and turn off the fire, leaving it to finish doing for another couple of minutes. When the fish is finished, we remove the bay leaf, cooked onion and parsley and serve.
