Banana pudding with an Argentine touch

Did you miss your bananas? Don't throw them away! Try this recipe of banana pudding with heart of dulce de leche. You won't regret it.


When we think of a mate, we don't just think of mate. With it come an endless number of foods that fill our hearts and that, in general, have one ingredient in common: flours. Among all those preparations with flour, there is one that is quite common in our mateadas: banana pudding. Actually, it can be of different fruits, but the banana has an extra particularity: it gives it a natural sweetness that does not require much more to be added than that.

Banana pudding is also an excellent alternative when we missed the fruit and we think it is to throw away. Stop right there! Nothing more delicious for this recipe than ripe bananas. So, if you think they're already past, it's time to start making a pudding. Today we bring you a version that bets on healthieringredients . Because, for something to be rich, you don't have to have kilos of butter. This recipe is very easy to make and the result is a resounding success.

Of course, as we are in Argentina, we will make it a little less healthy and we will add a national touch: an unforgettable center of dulce de leche- Yeah . You can't ask for more.

Shall we? with the recipe?


  • One cup of ripe banana puree
  • One egg
  • One cup of wholemeal flour (can be white flour).
  • ¼ cup olive oil
  • One tsp. vanilla extract
  • One tbsp. baking powder
  • Optional: ¼ cup chewing sugar (preferable) or white
  • Sweet milk, necessary amount (you can use whatever you want, even sweet milk without sugar)

A clarification before we go on. As we said before, ripe bananas already provide their share of sweetness. In this you will have a lot to do with each other's taste. This pudding can be made without sugar, with the amount of sugar suggested in the recipe or with more. Everything will depend on the palate of the diners. Let's move on.


  1. Process or liquefy all wet ingredients.
  2. Sift the dry ones (flour and powder).
  3. Integrate the dry to the wet with enveloping movements.
  4. Dump half the preparation into a lightly oiled pudding.
  5. Place a channel of dulce de leche along the pudding. You have to be generous, but don't overdo it.
  6. Dump the rest of the mixture.
  7. Cook in preheated 180 degree oven for about 50 minutes. Anyway, check if it's ready with a knife: when it comes dry, it's time to take it out of the oven.

You can't believe how rich it's left. Enjoy it!
