Baked eggplant milanese

Today we will teach you, in just a few simple steps, how to make the best eggplant milanese so that you can show off and enjoy a delicious and economical. If you're looking for a more blunt dish, look at my stuffed eggplant recipe. 

Eggplant milanese are especially valued by the vegetarian community for being lighter and richer than traditional ones. In addition, eggplant provides more minerals and vitamins.

 How to prepare eggplant milanese 

The ingredients
  •  3 eggplants 
  •  200 grams of flour 0000 
  •  300 grams of batter (breadcrumbs) 
  •  2 beaten eggs 
  •  Pinch of coarse salt 
  •  Pepper to taste 
  •  A little parsley well chopped 
  •  A tablespoon of chopped garlic
  1. First we need to pass through flour the eggplant sheets that we have already cut.
  2. Then pass through the 2 beaten eggs, which are already seasoned with garlic and parsley previously chopped. Add salt and pepper to taste. To finish it is ideal to pass the sheets through the batter (breadcrumbs).
  3. Now you need to macerate for at least 30 minutes so that the seasonings stick. Keep the oven preheated well and put them to cook.
  4. Seeing a golden color, it's time to turn them around.

 Like many other vegetables, they quickly oxidize. This is why we always  recommend that they be cut at the moment and not leave them hours before (and worse days!), to prevent them from getting ugly.
