At the height of the circumstance

The photosynthesis of the vine is optimally produced between 25 and 35 degrees. This is the process where the leaf receives the sun's rays to transform them into chemical energy, generating sugars and  carbohydrates  that sends to clusters, trunk and roots.

In addition, by means of the same leaves perspiration occurs, where the  plant  loses water by evaporation to regulate its temperature. All this is produced in perfect balance. But what can happen if the temperature is placed above 35 degrees? What would happen would be what is called “ heat stroke ”, disrupting the normal operation of the plant .

With  heat stroke, the breathing of the  plant increases and photosynthesis decreases. And in doing so, there is a decline in the production of sugars. The vine enters stress and directs the available sugars to the trunk and roots, not to the ripening clusters, which stop their growth, are smaller and weigh less. The effect on the harvest, can be very serious.

 Salta  is crossed by the Tropic of Capricorn. In these areas, due to the high and constant temperatures, no  wines are made. However, as you ascend, the temperature drops at the rate of one degree centigrade every 180 meters.  The Calchaquíes Valleys  are about 2,000 meters high, a situation that makes the latitude compensated by the height.

On the one hand, the height generates extraordinary thermal differentials which is an ideal condition for the maturity of  tannins  in  wines . On the other hand, the great sunstroke generates greater dye intensities and, coupled with the environmental dryness, slightly dehydrates the grains of the vine, causing an effect of concentration of substances in the grape grain, and returning the  wines  concentrated and full-bodied.

Thanks to the soil qualities and unique climatic conditions, Salta  wines  have notes of ripe fruits,  jams  and certain spicy aromas. Alcoholic graduations tend to be high (14 degrees), since the correct maturity of the grapes is awaited. They are thick and fleshy  wines  with great explosion in the mouth.

 Bodega Etchart  was founded in 1850, in  Cafayate  . There are five  wine  lines and among them, the Cafayate Reserva stands out.

Its Syrah is an elegant style  wine  with a balanced concentration and unctuosity that combines mineral notes, leather and ripe fruits, with a prolonged persistence of taste in the mouth. It is powerful and complex, its passage through oak gives it notes of  coffee  and  chocolate  .

It accompanies very well spicy meats, lamb or chivito grill, hard or semi-hard  cheeses  . It is special for  stews , and well seasoned and spicy hot meals.
