Combination argenta: empanadas and wine

One, more Mendoza than the other. Empanadas have their cuyana version, while the wine is cuyano. Which varietal is best?

As an entrance to a good  Argentinian asado ,  empanadas are the best option . And, as a common denominator, to “water” everything that enters the stomach,  a good  Mendoza wine  . But what is the best recipe for patties? What ingredients should we use to make their combination with wine irresistible?  Here, all about empanadas and wine.

First, let's talk about pairing. The goal of pairing is clear: to highlight and highlight the aroma and taste qualities of both products, harmoniously, assembled. But this should not overshadowed the characteristics of each, if not, give his best to become a  marriage , to fit perfectly.

Thus, there is no doubt that Argentine empanadas are accompanied with wine. However, it is important to understand that,  depending on the region  or province, this dish has different fillings, masses and can even vary the way they are prepared.

 Mendocinas empanadas

  • 500 g flour
  • 1 tsp. fine salt
  • 200 cc water
  • 100 g fat
  • 100 g pella fat
  • 1 tsp. ground chili pepper
  • 1 tsp. oregano
  • 500 g ground or minced meat
  • 1 kg onion
  • 1 pinch cumin
  • 4 eggs

 For the dough

  1. Melt the fat and warm the water with salt.
  2. Then, form a crown with flour and in the center, lay out the fat and water.
  3. Mix all ingredients until a smooth mass is formed.
  4. Knead for a few minutes and let rest for 30 minutes.
  5. For the filling
  6. .
  7. The first step is to chop the onion and fry it in a saucepan with the same pella fat.
  8. Then add the meat and season with oregano salt and ground chili pepper.
  9. Let cook slowly and add, in the end, cumin.
  10. On the other hand, cook the eggs (until hard), peel them and cut them into eighths.

The final preparation

  1. Roll out the dough and cut it into discs.
  2. Distribute the filling with a soup spoon in the center of each disc and add, over the filling, a slice of egg. Before closing them, a black or green olive can be added to them.
  3. Close the disc making a repulgue and paint the pie with beaten egg.
  4. Cook in the oven until golden brown.

 Malbec, the ideal pairing

On the one hand, it accompanies the  beef  very well and, having a very seasoned preparation, a powerful strain collaborates to make everything look.  Another red wine , with great body, which is doing very well, is cabernet sauvignon.
