Alfajorcytes that eat your coconut!

How did they happen this week? For me, the days pass by very fast, but always looking for something new. I guess you've noticed that I love  coconut  and that's why seeing these alfajorcites didn't take a day to make them.

Easy, simple, different. I remember that before I bought the coconut conitos that later stopped making the famous  alfajores  brand of Mar del Plata. I never understood the reason; they were exquisite. Let's go to the recipe. 

 ingredients 

  • Eggs, 2
  • Sugar 60 gr
  • Vanilla Essence 1/2 tsp.
  • Shredded coconut 150 gr
  • Flour 0000 20 gr
  • Butter 80 gr
  • Milk 30cc.
  • Dulce de leche pastry c/n.

 Preparation 

  1. In a bowl (with hand whisk) beat the eggs with sugar and the essence until whiten. Add coconut, milk and flour and integrate with spatula. Finally add the melted butter (and warm) and mix well. Let stand to hydrate the coconut.
  2. Roll out the dough and cut the caps with a round cutter. Place on a maintained plate and bring to a moderate oven for about 10 minutes, until brown (or not, as you like). Remove, let cool, assemble the alfajores with the dulce de leche and... ready to enjoy!

Approximately 20 caps come out (depends on diameter).
