Alfajor Cordoba: Ta great!

The weakness of all Argentines is alfajor. The weakness of the Cordobes is also the alfajor, but... make it Cordoba, please.


Every alfajor has its magic. You can never miss a special filling, a layer of chocolate or glaze, or whatever you like best. Many Argentines tell us from abroad that the alfajor is one of the things you miss most when you are far away. Also the weed, the sweet milk and the Fernet, obvious! But there is one type of alfajor that drives us crazy to the Cordobes, and everyone who visits this province. It's the cordovan alfajor. Companies that are engaged in the production of this delicacy are many. Among the most recognized are La Quinta, El Rosario, Chammas, among others.

In most factories, educational visits are conducted dedicated to student groups or independent visitors. In these tours they provide you with all the data you have to know to produce alfajores cordobeses. Special tastings are also held. Mmm... great, isn't it?

We tell you the recipe so you don't eat the trip, and you don't have to come to Córdoba to try this bomb.


  • 500 g leavening flour
  • 1 pinch of salt
  • 300 cc of milk cream
  • 5 tbsp. impalpable sugar
  • zest of 1 orange
  • To fill: sweet of milk or sweet of fruit
  • To cover: loose glaze

Step by step

  1. Place flour, salt, milk cream, impalpable sugar and orange zest in the processing machine. Process until a smooth dough is achieved.
  2. Leave to rest in a refrigerator. Roll out the dough 1/2 cm thick. Cut the caps of the diameter in which you want the alfajor.
  3. Pre-coat the plates, and place the lids. Bring to a moderate preheated oven (160°-170°) for about 10 minutes, remove, allow to cool, so they peel off on their own and do not break.
  4. Fill to taste and pinch them with loose glaze. Wait a little while... and eat!

Secret tip for a glaze “pee-cuckoo”
