Agroecological recipe: chard and cabbage frittata

An agroecological association of women based in Arroyo Leyes gives us this original recipe.

The town of  Arroyo Leyes  is located northeast of the city of Santa Fe, on Provincial Route No. 1 “Teófilo Madrejón”. It is between the towns of San José del Rincón, to the south, and Santa Rosa del Calchines, to the north. Due to its natural and landscape characteristics, it  has traditionally been chosen as a resting place , particularly by weekend visitors in the summer season.

But Arroyo  Lyes is also a village full of laburants who, day by day, have to earn their bread.  A lot of people work in fifths, harvesting everything a little.In this context, in early 2019, 11 women concerned and affected by the country's economic situation created an agro-ecological garden project. The idea was that the initiative would allow them to fill the  dishes  with food in times of need. They are called Las Mariposas from the María Juana neighborhood. Today they are already harvesting their own food and continue to support the joint project.

Girls say that it  was such enthusiasm when they got their first harvest that they prepared some improvised recipes . It was beautiful to be able to prepare food with what was harvested by their own hands.

 Agroecology, much more than a fashion 

Around the last decade of the twentieth century,  the concept of sustainable development emerged, which incorporates into the discussion the environmental character  with concepts of stability, resilience and adaptability. These are combined with the economic approach based on productivity, efficiency and effectiveness and the social discussion on equity. Achieving this primary value requires an understanding of the functioning of natural systems from an environmental point of view, and their conservation from socio-economic activity.

For its part, the  coevolutionary vision  proposes that  societies interact with their local environment , enriching or degrading it according to their  knowledge  and assessment of him. In turn, the environment responds by providing society with high or low quality resources, depending on the level of degradation to which it has been subjected.

A relevant form of intervention of societies towards their local environment is agricultural activity.  One modality of agricultural methods and techniques is organic farming , based on agroecological theory. This can contribute to improving the sustainability of agricultural systems, both in their environmental (natural resources) and social components (mainly rural producers). The aim is to improve well-being, quality of life and equity among farmers.

 With this imprint it was also that the project of Las Mariposas was born , which bring us this recipe. They called it “Frittata of red stalk chard and cabbage leaves to herbs.” It is an omelet made with the following ingredients:


  • 4 outer leaves of cabbage
  • 4 or 5 leaves of red stalk chard
  • 5 eggs
  • 1 onion
  • 1 tablespoon parsley
  • 1 tablespoon coriander
  • 1 tablespoon ciboulette
  • 8 gourmet carrots
  • 1 tablespoon flour
  • Frying oil (required amount)


Boil the gourmet carrots and cut them into medium  cubes  . Book. Fry the onion, then add the cut cabbage and chard leaves to it. Turn off the fire. Add parsley, coriander and ciboulette (all finely chopped). Mix and let cool for a moment.

In a bowl, join the eggs with the previous preparation and gourmet carrots.  Saseason  to taste and add a tablespoon of flour. Bring to a frying pan  and cook until the edges and bottom come off the ingredients . Turn the frittata until the end of cooking.
