2 simple recipes, pastries and cordobese

We approach you, from the hand of kitchen professionals, 2 easy recipes for your snack. Be encouraged to play in the kitchen in the Cordovan style.

 Budín de mandarina y mistol

Within the framework of the “Disfrutá #CórdobaDesdeTuCasa” program, some  gastronomic professionals play it  and share  traditional recipes from the heart of the country.   of classic recipes  of the province that are an  indescribable delight.  In this case we will bring you 2 pastry recipes,  easy and homemade that you can make from your kitchen.  I took a trip to the mountains of Cordoba, from your house. For a snack or breakfast, they are the special delights that will brighten your heart.

Because creativity is what we have left over and  in the kitchen we always expand  , especially if it is to invent and create. Mandarin pudding and coconut brownie are the stars of the afternoon in these quarantine snacks... Do you dare to do them?

Mandarin and mistol pudding

Alejandro Castro, Cordovan cook,  shares from Villa Giardino, this time, a recipe based on a very characteristic product of the area, as is the mistol.  Mistol is a sweet fruit very typical of mountain mountains. Because our mountain gives us the best native plants, native herbs and  edible regional fruits . It would be a crime not to take advantage of them. This chef also uses  Cruz del Eje flour,  but the recipe can be made with  carob flour and chañar.

  • 1 cup mistol flour

  • 2 cups flour 000 or wholemeal

  • 1 cup

  • sugar

  • 1 cup sunflower oil

  • 1 egg

  • A pinch of baking soda

  • 1 tangerine: zest and juice

  • Chocolate Only if you are paint!

Step by step comes out a  pudinazo
  1. Mix in a bowl all the ingredients, with the help of a spatula and without whipping, until you achieve a uniform mass with a creamy consistency. If you paint you, you can try a tablespoon, so you  know perfectly  what is missing...
  2. Once the preparation is ready, you have to fill the molds. You can choose small or large pyrotines. The important thing is that you fill to 3/4 of its entirety. Then you can throw chocolate chips on top of it.

For cooking we have two options:

  1. In the oven: 180 °C for 10 to 12 minutes.
  2. In the Essen pot: pre-heat the pot with its lid to generate oven environment.Place the molds and cook for 8 to 10 minutes over crown heat.

Secretip:  To control your cooking, prick with a toothpick or fork.Once it comes out clean, we have our puddings ready. There's only... enjoy!

Coconut Brownie in 3 Steps

Also from the mountains, but from another side. Rita Soria invites us to her kitchen, as part of “Alfajores Elmira Castro” from Mina Clavero. To cook the ideal dessert: a few simple but delicious coconut brownies. Do not miss this recipe in the hands of a  family business with 120 years of history.  Yes,  these recipes are the product  of work and learning for six generations... let's get to know them.

  • 5 eggs

  • 2 cups sugar

  • 3 cups coconut

  • 200 grams butter

  • Flour

Step by step
  1. Place all ingredients in a bowl (minus butter and flour). Stir and mix them until a soft consent is generated.
  2. Add the 200 grams of melted butter and continue stirring. Thus, the mixture is taking a thicker consent. Then add the cup of flour to it. And the preparation is ready.
  3. Place in the oven between 20 and 25 minutes. Once it gets up and is well cooked, take it out and try it!.

Ta ricazo!

These two simple recipes are a delight.  With the advice of these gastronomy professionals, there is no way they will go wrong. Be encouraged to experience Cordovan food and take  a trip to the mountains  in the middle of the quarantine. With this mandarin and mistol pudding or with this coconut brownie you have food for the heart.
