The pinion is the neuquino fruit par excellence. It comes out of the araucaria (or pehuén, in Mapuche language) that belongs to the coniferous family; this tree can grow up to 40 meters and reproduces mainly in Neuquén and some Chilean regions and is revered by the native peoples. In our country its main habitat is between the thermal resort Copahue and Lake Huechulafquen, all within Neuquén.
In addition to being the Neuquina flag tree and a very important symbol for native peoples, the fruit of this tree is unique and delicious . The use of this fruit in meals became extensive in the highest international restaurants.
The pinion is rich in protein and sweet, but, if boiled, salt is added to it. It is similar to a bean, but at the same time it can be consumed as a snack for the mate. To peel it, it is necessary to boil it a long time. It can also be done, like everything in Argentina, to the embers!
We leave you two recipes, a sweet and a salty, so that you know more about this nutritious fruit
Mix in a bowl the butter with sugar and egg with the pinch of salt. Add the extract or vanilla seeds and gradually the flour until we have a soft dough , slightly fat, but we can handle. We add half the pine nuts and form a crushed ball , wrap in cling film and refrigerate for at least an hour. We heat the oven to 180º heat up to bottom.
After the rest time we stretch the dough, between two baking papers, with a thickness of about 6mm, more or less. Cut shapes with a cookie cutter or glass and place on a non-stick baking sheet or lined with baking paper.
Brush the cookies with beaten egg and sprinkle the rest of pine nuts on top . We bake for 15 minutes , roughly, depending on the oven, until the cookies have a slight golden hue . We take out of the oven, leave on the tray for five minutes and carefully pass to a rack so that they finish cooling.
First, we sap the chicken and fry it in a casserole with oil until golden brown. When it's golden, we withdraw and reserve.
We toast the pine nuts in a frying pan, without any fat. In the same casserole that we have made the chicken, sautée the peppers and chopped onion. Season and we can also add some mushrooms . When it is well browned, add the pine nuts and sauté.
We serve a bed with the vegetables and put the chicken on top. We decorate with a little chopped ciboulette.
