Go to sectionThe patero wine is undoubtedly an Argentine registered trademark . It is the most natural of all and, even today, its artisanal elaboration process is maintained. Its name leaves no room for doubt: to produce it the “paws” are used. That is, they step on the grapes with their feet, literally.
Initially, the technique was reduced to stepping the grapes on cow leather and collecting the resulting must. This was deposited in clay jars to give rise to fermentation. Finally, magic: the natural juice of the grapes was transformed into the precious wine . There were no leaks, only the decantation itself. Over time, animal leather was replaced by llevers and boots began to be used. But patero wine still maintains its method and its validity.
