Scraped pancake: for breakfast or snack

Early in the morning, a midday snack or a mid-afternoon snack. At breakfast, at lunch, at a nap, or at dinner. Any time is a good time to eat a scraped pancake. The Mendoza knows the crescent, the toast, the threads, the churros and biscuits, but always prefers the scraped pancake. A portion of pure fat, but tasty and filling.

Pancakes, in any of their forms, have basic ingredients: fat, water, salt and yeast. But the scraped pancake is special because it does not carry yeast and is therefore compact and without air or pores. A real medallion of dough. And, despite their ease of preparation, we prefer them made by master bakers. We all have our favorites. The ones in the neighborhood’s warehouse , the ones in the corner kiosk, the ones in the classic bakery-confectionery or even those in the supermarkets. They all have their charm.

They’re decoys for the best memories of bygone times. Its taste and texture give us vivid memories of school breaks, mates in the club or the trip of graduates. They are what we Mendoza miss most when we travel. Because in Chile there are “ayuyas”, which are similar, but they are not the same. Something similar happens in other provinces. St. John has the “Semites”, but they also do not resemble scraped pancakes. Not to mention when we travel abroad, where the closest thing we find is hamburger bread, and only because they are dough and round in shape.

Where did they come from?

History shows that they emerged from what was left out of the dough of the pies. And the term “scraped” comes from the way you cook them. Some say they were made directly on the coals and then they were hard and burned on the outside. That’s why it was necessary to scrape them off and take away the bitter. Others argue that they used to be made taller, more “chubby”, and so they had to be left in the oven for more time to cook inside, overcook and burn them outside. Then he also had to scrape them off to remove the bitter from the outside.

Probably on a visit to Mendoza you want to try the exquisite wines, although some are a bit expensive. Or you’ll want to taste a real goat on the flame, but you’ll have to go to Lavalle or Malargüe. That’s why I recommend you get to something more accessible like the scraped pancake. You will find it in any warehouse and at a very affordable price.
